tequila grilled chicken

A nice twist to grilled chicken!
1 1/2 teaspoons ground cumin.
1 teaspoon chili powder.
3/4 teaspoons sea salt.
1/4 teaspoon chipotle chili powder.
6 bone-in chicken thighs.
3/4 cup pineapple juice.
1/3 cup tequila.
1/4 cup honey.
2 teaspoons corn starch.
2 teaspoons water.
2 teaspoons grated lime rind.
3 tablespoons lime juice.
1/4 teaspoon crushed red pepper.
cooking spray.

1. Preheat grill to medium-high using both burners. After preheating, turn the left burner off. (leave the right burner on)
2. Combine the first 4 ingredients in a small bowl; rub evenly over chicken.
3. Bring the pineapple juice, tequila, and honey to a boil in a small sauce-pan; cook until reduced to 3/4 cup (about 10 minutes).Combine cornstarch and 2 teaspoons water in a small bowl, stir well. Add cornstarch mixture to juice mixture, stirring constantly with whisk. Bring to a boil, and cook for 1 minute, stirring constantly. Remove from heat, and stir in lime rind, 3 teaspoons lime juice, and red pepper.
4. Place chicken on rack coated with cooking spray over right burner (direct heat). Cover and grill for 5 minutes on each side, basting occasionally with juice mixture.Move the chicken to grill rack over left burner (indirect heat). Cover and grill an additional 5 minutes on each side or until done, occasionally basting.
We had this with corn on the cob and pasta salad.

peachy pork cutlets

This is a real easy and tasty pork dish!
2 teaspoons olive oil.
4 (4ounce) center-cut boneless pork loin chops, trimmed
1/2 teaspoon salt.
1/2 teaspoon ground black pepper.
2 tablespoons thinly sliced onions.
2 teaspoons thyme.
2 peaches, each cut into 8 wedges.
1/2 cup dry white wine.
1/2 cup fat-free lower-sodium chicken broth.
2 teaspoons honey.
2 teaspoons butter.
1. Heat a large skillet over medium-high heat. Add oil to pan; swirl to coat. Sprinkle chops evenly with salt and pepper. Add chops to pan; cook for 3 minutes on each side or until done. Remove from pan and keep warm.
Add onions thyme and peach's to pan; cook for 2 minutes. Stir in wine, scraping pan to loosen browned bits; bring to boil. Cook until reduced to 1/3 cup (about 2 minutes). Stir in broth and honey; bring to a boil. Cook until reduced to 1/3 cup (about 2 minutes). Remove from heat; stir in butter. Spoon over chops.
We served them with rice and asparagus.

Orange Chicken with Sweet potatoes

Orange Chicken with Sweet potatoes.
This is another great recipe for chicken. Sooo moist and tender and tasty!
And it's quick and easy! 3 medium sweet potatoes, peeled and sliced.
2/3 cup plus 3 tablespoons all-purpose flour, divided.
1 teaspoon salt.
1 teaspoon onion powder.
1 teaspoon ground nutmeg.
1 teaspoon ground cinnamon.
1 teaspoon pepper.
4 boneless skinless chicken breasts.
2 tablespoons butter.
1 can condensed cream of mushroom soup.
3/4 cup unsweetened pineapple juice.
2 teaspoons brown sugar.
1 teaspoon grated orange peel.
1/2 pound sliced fresh mushrooms.


Layer sweet potatoes in a 3 qt slow cooker.
In a large resealable plastic bag, combine 2/3 cup flour and seasonings: add chicken, one piece at a time, and shake to coat.
In a large skillet over medium heat, cook chicken in butter 3 minutes on each side or until lightly browned.
Arrange chicken over sweet potatoes.
Place remaining flour in a small bowl and stir in soup, pineapple juice, brown sugar, and orange peel until blended. Add mushrooms and pour over chicken.
Cover and cook 3 1/2 -4 hours on low.
The recipe says to serve with rice, but we felt that was too much carbs, so we served it with chopped steamed broccoli.

Quick and easy Ravioli Lasagna

Quick and easy Ravioli Lasagna
1 lb ground beef. We used lean hot Italian sausage.
1 pkg frozen chopped spinach, thawed and squeezed dry.
1 container ricotta cheese. We used fat free.
1 lg egg.
3/4 cup fresh shredded Parmesan cheese.
3/4 cup fat free shredded mozzarella cheese.
18 oz ravioli. We used portabella and cheesed stuffed squares.
2 cans marinara sauce. We used, 1, 15 oz can pizza sauce. 1, 15oz can spaghetti sauce.

preheat oven to 350.
Brown meat in pan.
Add pizza sauce and spaghetti sauce.


Combine spinach, egg ricotta cheese, Parmesan cheese in a bowl.
We used frozen ravioli, so it needed to be cooked first.
Spread a small amount of sauce in bottom of greased dish.
Add a layer of ravioli, using half .
Cover with half of the meat sauce.
Spread the spinach sauce, and then repeat with ravioli.
Top with remaining sauce, cover with foil and bake at 350 for 40 to 45 minutes.
Sprinkle with mozzarella cheese and continue cooking for 10 minutes or until cheese is bubbly.

Let cool 10 minutes before cutting.

Southwestern Turkey Casserole

Southwestern Turkey Casserole

10 ounces cooked diced turkey.
16 (6in) corn tortillas, cut into strips.
1 can condensed cream of chicken soup.
1 can condensed cream of mushroom soup.
1 can diced green chillies, drained.
8 ounces shredded cheddar cheese.
1 cup sour cream.
Preheat oven to 350.
In a mixing bowl, combine chicken soup, mushroom soup, chilies, and sour cream.
Line the bottom of a greased 8x12 baking pan with 1/2 corn tortillas.

follow with 1/2 turkey.
Then 1/2 soup mixture.
Sprinkle with 1/2 cheese.
Repeat layers and top with remaining cheese.
Bake 30-45 minutes until heated through.
Enjoy!
Now we used fat free sour cream and fat free shredded cheese. If you use the fat free cheese. wait until heated through and put cheese on top for the last 10 minutes.

Slow Cooked Cranberry Pork Roast

This was a really tasty and easy dish to make!

Slow cooked Cranberry Pork Roast.
4-6 lbs Pork Loin. (browned on all sides)
1 can whole berry cranberry sauce.
3/4 cup sugar.
3/4 cup cranberry juice.
1 tsp ground mustard.
1 tsp ground pepper.
1 tsp ground cloves.
Mix ingredients and pour over pork in a 5 qt slow cooker.
Cook 6-8 hours on low.

mix 1/4 cup water and 1/4 cup cornstarch.
Remove roast from cooker, transfer liquid to pan on stove. Add cornstarch/water and cook until thickened.
pour over pork slices.
